Crock-pot Chicken Chili

On Sunday night my husband sat down to do our weekly budget.

At the end of the budget meeting he had concluded that Megan had gone on her very own little "shopping spree" during the month of October.

What can I say? I like to try and push the limits.

I also like a good challenge. So when the hubs suggested that we try and go the rest of the month without eating-out or going to the grocery store I decided that this would be a good challenge.

Actually, first I screamed and cried, and vowed to never talk to my husband again if he made me do this.

Then I decided it would be a good challenge.

So I set out to formulate a lunch and dinner menu that would require no extra grocery trips.

We are almost all the way through the month and I am proud to tell you that we have actually done it.

Its amazing the treasures you have hiding in your pantry if you actually look inside of it.

Although I will tell you, there are no hidden sweet treats in there. I searched high and low for those.

But I met the challenge and we have not spent any money this last week of October.

I am bound and determined to become a frugal grocery shopper, and I feel like this was my first step.

I wonder how many steps there are?

Yesterday I made a yummy crock pot soup and I wanted to share it with you. We had all of these ingredients laying around and it was extra yummy.

Crock-pot Chicken Chili
3-4 chicken breast- boneless, skinless
1 16oz canned corn
1 16oz canned tomatoes
1 can of chili beans - drained
1 can of kidney beans
1 pkg. chili seasoning
1 48 oz. can V-8 juice

Put all ingredients in crock pot.
Cook on low heat 8-10 hours.
Remove chicken, shred.
Return to pot.
Stir and serve
Makes 14 cups.

Seriously people its that easy and is yummy, yummy, yummy!

Minus all the crazy amounts of cheese this soup is pretty good for you too!

I was so proud of all the money saving that we have done I felt that I needed a reward so stopped and got a Starbuck's coffee this morning.

Maybe that defeats the purpose of the money saving?

    Two things:

    1, Budget talks SUCK. I hate them. They always end up with the girl in tears and the guy feeling like the jerk.

    2. If you haven't read "Confessions of a Shopaholic" you really must. So much better than the movie. The whole "reward yourself with Starbucks" thing totally reminded me of Becky Bloomwood.

  4. Sounds yummy, but I have to say, I would never have most of those ingredients in my pantry. LOL

    I guess we're not bean eaters or V8 drinkers. At least not in the 48oz size. LOL

    Needless to say, I'll have to give it a try after my next trip to the grocery store. It sounds really yummy!!

  7. It sounds strange, but I love chili served with some sour cream over white rice. Delicious! It also helps stretch the chili out a bit longer!

    Being an accountant...I'm the one that lives by a strict budget and gives lectures to my boyfriend. Sometimes I wish I wasn't so number crazy and could go on a monthly shopping spree!

  16. Way to go on your challange! Looks yummy! Oh the budget!... I have definitely had that challange too! Especially when you're moving and you have to use everything you can in the pantry, fridge, and freezer so you don't have to throw it out! I had to use tomato paste/sauce or beans in everything for weeks, (we got a small case of each for a great deal:)) ha! Hope u have a great weekend!

    If you want a good website for saving money on groceries you should check out Money Saving Mom -- http://www.moneysavingmom.com/ -- she is pretty much my idol. She feeds a family of five on $40 a week. I can barely feed a family of 3 on $100/week! She has all sorts of great tips -- I've learned a lot but I've still got a loooong ways to go :) Baby steps, right? :)
